Sometimes I don’t feel like cooking… ok… actually it’s a lot of the time I don’t feel like cooking. But I do anyway because I don’t like eating ‘junk’ (ie. Premade/packaged/frozen food). I try my best to eat as little ‘junk’ as possible. It’s unavoidable though. There is so many products out there and so much marketing, sometimes it’s hard to say no to the fast and easy way. And sometimes I’m just lazy. I find that the best way to avoid those ‘junk’ days is to have a handful of REALLY easy and fast fallback/staple recipes.

As you can see (by the title) there is no cookbook Tuesday recipe this week. Not even a late one. There’s just been to much going on, packing for a trip and I pulled a muscle in my neck the other day while stretching (apparently I need to do warm ups before I stretch. Crazy!) and to many other things to cook.

I’m starting to think I should change it to Cookbook Wednesdays… out of three Cookbook Tuesday posts two have been late. Not a very good track record. But as I said last week, better late than never! And talking about late, I still have a lot of things to catch you up on from before Christmas. I had better start getting my act together. Does that sound like a New Year’s resolution??? Maybe it should be.

We’re getting close to the end of the 12 Days of Baking, 2 more recipes left after today. I don’t think that I’ve ever had so much sugar in my entire life. I’m pretty sure that this sugar high is going to last well into next year. Thankfully, my good friend Vivian (who doesn’t have a blog of her own) has agreed to take some of the pressure off, save some of my teeth from all the sugar and do a guest blog. One the things that always impresses me about her is that she trys new things and is never afraid of a challenge in the kitchen.  Take it away Vivian…

Well, I’ve decided to celebrate the 12 Days of Christmas in baked goods. I’m not sure that I’ll be able to do it, I’m cutting it a little close. Although, the 12 Days of Christmas actually begins the day of or the day after Christmas (depending who you’re talking to)… so I guess I’m early. But still, it make sense to me to get all my baking done before Christmas which gives me… 13 days. Yikes! Good thing I like to multi-task, which doesn’t always work out so well for me (more on that another time), but I’ll do my best.

I’ve turned into a bit of crazy person, paranoid about chemicals and preservatives. I’m pretty sure that if I didn’t have to work for a living I’d be making everything from scratch and maybe live in a little hut on some remote mountain using leaves for towels and… ok I’m not that crazy, but I would for sure want to make more things from scratch.
