Sometimes I think that I might be slightly clairvoyant. Sometimes strange things happen. For example, I can pretty much, without fail, know when John is home from work. I don’t mean when he walks through the door, I mean when he’s off the elevator (which isn’t near our unit, so I can’t hear it) on our floor or even just somewhere in the building. I can’t even count the number of times that I’ve stood up walked towards the door and he’s walked through it. And take for instance this month’s Daring Cooks Challenge. A couple weeks before the challenge was posted I started thinking about making a gumbo (something that I’ve never made before). About a week after that there were at least two different shows on the Food Network that featured gumbo. Than the May challenge was posted and it was… gumbo. Crazy right?!?!

Sometimes I don’t feel like cooking… ok… actually it’s a lot of the time I don’t feel like cooking. But I do anyway because I don’t like eating ‘junk’ (ie. Premade/packaged/frozen food). I try my best to eat as little ‘junk’ as possible. It’s unavoidable though. There is so many products out there and so much marketing, sometimes it’s hard to say no to the fast and easy way. And sometimes I’m just lazy. I find that the best way to avoid those ‘junk’ days is to have a handful of REALLY easy and fast fallback/staple recipes.

Leftover Soup

Awhile back we had a HUGE amount of leftover odds and ends in the fridge. They were from a few different meals and I just could see how to put them together in a cohesive way on a plate. Enter Leftover Soup. It was the perfect way of throwing everything I had together and by adjusting the flavours as I went making something really delicious.

It was so cold this past weekend I really wanted to make some soup to warm us up. I have a few different soup cookbooks, it took a bit of time to go through all the recipes. I ended up choosing 2 that looked good (a vegetable which I’ll probably make another time, and clam) so I gave John the final choice. Clam soup is not something that I would normally have tried but the picture in The Soup Bible looked really good.

I’m starting to think I should change it to Cookbook Wednesdays… out of three Cookbook Tuesday posts two have been late. Not a very good track record. But as I said last week, better late than never! And talking about late, I still have a lot of things to catch you up on from before Christmas. I had better start getting my act together. Does that sound like a New Year’s resolution??? Maybe it should be.

This will probably be by far the hardest recipe that I’ll ever write. I am horrible with measurements. I almost never completely follow a written recipe and rarely pay attention to the amounts that I change. But at least with a written recipe there are measurements to vaguely follow. This recipe is all by taste.

I hate the cold! If I could hibernate or migrate I would, but sadly life is not so simple. So instead I’ll just have to throw on a few more layers, add to my ever growing scarf collection and make a few chilly weather dishes.

Mmmm!There’s nothing better than a bowl (or two) of homemade soup on a cold night… and if I’m completely honest on a hot day too. I’m pretty sure that I had homemade soups in my fridge all summer long. What can I say, I love soup. It’s so easy to make and so versatile. I very rarely have packaged soup in my cupboard, I much prefer fresh. Let’s be clear though, I’m not advocating against premade, hell there are a few that I like and in a pinch or if I’m in a rush they do just fine. But fresh, homemade soup is just heaven.
