We’re getting close to the end of the 12 Days of Baking, 2 more recipes left after today. I don’t think that I’ve ever had so much sugar in my entire life. I’m pretty sure that this sugar high is going to last well into next year. Thankfully, my good friend Vivian (who doesn’t have a blog of her own) has agreed to take some of the pressure off, save some of my teeth from all the sugar and do a guest blog. One the things that always impresses me about her is that she trys new things and is never afraid of a challenge in the kitchen.  Take it away Vivian…

Just a quick post, as I’m getting ready to go to the first family Christmas gathering of the season.

While I was thinking about making chocolate chip cookies as one of my 12 Days of Christmas recipes, my mind changed three times with how to go about making them. My original intention to make a classic and simple chewy chocolate chip cookie first changed when I realized that there were mint chocolate chips in the pantry. So my the recipe changed to mint chocolate chip cookies. Just a bit of a twist on the classic chocolate chip recipe but with more of a Christmasy feel. Then I saw the leftover mint marshmallows and decided to change the whole direction of the cookie.

My best friend Amanda lives in Port Hope. What does that have to do with butterscotch fudge? Well Port Hope is right next to Cobourg which happens to be where one of the locations of my favorite chocolatier is. The Nutty Chocolatier… give me a moment while I wipe the drool of my keyboard. I’m addicted to their handmade chocolates, truffles and of course their fudge.

It’s my good friend Maria’s birthday today. Happy Birthday girl! Maria likes chocolate covered marshmallows. When I saw a picture of these homemade marshmallows on TasteSpotting I knew that I had to try and make them for her. Plus it’s one more recipe closer to my 12 Days of Christmas goal.

Well, I’ve decided to celebrate the 12 Days of Christmas in baked goods. I’m not sure that I’ll be able to do it, I’m cutting it a little close. Although, the 12 Days of Christmas actually begins the day of or the day after Christmas (depending who you’re talking to)… so I guess I’m early. But still, it make sense to me to get all my baking done before Christmas which gives me… 13 days. Yikes! Good thing I like to multi-task, which doesn’t always work out so well for me (more on that another time), but I’ll do my best.
